COFFEE CURIOSITY: What affects your coffee’s flavor? Part 2 – News – Marshfield Mariner

Last time, we discussed many of the pre-roast factors that help determine the complex notes you find in your daily brew. Today, we dive deep on coffee processing methods – a crucial pre-roast factor influencing the final taste in your morning cup. Once a farmer removes the coffee cherry from the tree, the bean must be removed. This process, like all steps in production, is intricate and may be approached from multiple angles. Let’s discuss: Wet Washed involves submerging cherries in water and pressing through grated panels, removing the outer skin and pulp, also known as mucilage. The cherries ferment in water for anywhere between 24 and 36 hours, which breaks down additional pulp before being washed thoroughly with water. Fermentation can contribute to any level of sourness in the final product, yet when properly tuned in the washed process generally creates a brighter and cleaner taste. Brightness manifests in the forefront of taste; a popping or sparkling sensation on the tip of the tongue. Brightness and acidity are synonymous in the coffee world, but brightness is often preferred due to acidity’s negative connotation. Common tasting notes that embody brightness...

Even the most experienced cooks experience the most epic cookery fails from curdled cake batter to

Even the most experienced cooks experience the most epic cookery fails from curdled cake batter to over-salted stews. Here’s our tips on how to salvage some of the most common kitchen nightmares… Thoroughly drain the pasta/rice in a colander/sieve. Heat some oil in a large frying pan, and fry the drained pasta/rice for a few min to try and drive some of the excess moisture off. Pull the meat out of the pan, pat it dry with kitchen paper. Tip out any liquid from the frying pan and wipe dry, then add oil and put over a very high heat. Add the meat and fry again until golden. Meat won’t brown if there’s too much moisture on the surface, or if your pan isn’t hot enough. Pat meat dry with kitchen paper before frying and don’t season it until you’re just about to put it in the pan (salt draws moisture out on to the surface). Heat the cooking oil until it shimmers, then start frying. If you slip with the salt, reach for a raw potato and add a large piece straight into the stew or soup, cook for a short time, then discard it. The potato will absorb some of the excess salt. Make sure to taste food before you season. Stock cubes and condiments like soy sauce all contain salt, so you may ...

A few months after HW Interiors’ owners and principles Lisa Hynes and Heather Weisz finished transforming

A few months after HW Interiors’ owners and principles Lisa Hynes and Heather Weisz finished transforming their client’s Palm Beach Polo and Country Club home, they received some surprising news.  “Someone literally rang their [client’s] doorbell and offered them a significant amount over what they had paid and renovated,” Hynes recalls. “So they sold it, fully furnished and toothbrush-ready, took the profit and bought a half-acre of land they wanted to build on, and that’s the house in the Cypress Island community we’re talking about now.”  Before embarking on the remodel, Hynes and Weisz, who hail from Connecticut and New York, respectively, had already established a social connection with their clients, Jen and Kevin Johnson, a couple with four children between the ages of 5 and 17. “We ran in the same circles, our kids took dance classes together, so they knew what we did,” Hynes says. The six-month enhancement required myriad updates, including tearing down walls, modifying flooring and tossing out heavy wood finishes, an activity Weisz has dubbed “de-Tuscanizing.” Similar to Frankenstein’s molecular reawakening, a necessary injection of pared-down elegance gave each space ...

Five ways to know if your woodfired pizza is the real deal | Bite | Orlando

Napoli has the VPN (Vera Pizza Napoletana) to give the stamp of approval to Neapolitan pizzerias serving up pies that project pure Italian pride. But here in Orlando, we’ve no such pizza police. Is that pricey oven in the back of the restaurant really doing its job? Here’s how you can tell just from looking at your pie. 1. LEOPARDING The deck of a woodfired oven should be a minimum of 750 degrees, which means any excess flour on the dough will char. If the oven’s hot enough, the bottom of your pizza should have stripes and spots (like a leopard – get it?) of charring. If any other flour other than 00 (aka “doppio zero” or double zero) is used, the char will be bitter. No buono. 2. CORNICHON The crust of a woodfired pizza is called a “cornichon,” and the cornichon should have some serious bubbles, indicating that the dough is properly fermented and activated in the hot oven. Without those big bubbles, you can assume the dough needed more time to rise. 3. SAUCE Assuming you ordered a pizza with a red-sauce base, that sauce should be thinly and evenly distributed, and it should be bright red with a slight acidic tang. The VPN requires that Neapolitan pizzas are made with a raw sauc...

The TV industry has been riding a wave of progression for the last year or so:

The TV industry has been riding a wave of progression for the last year or so: 4K has begun to dominate TV ranges and shop floors, Ultra HD Premium certification is finally ‘a thing’ and already HDR (High Dynamic Range) is no longer only exclusive to flagship models but filtering down to lower ranges too. As an example of the latter, Panasonic has four new ranges – no less than ten tellies – with 4K and HDR support this year, and this 50in TX-50DX700B belongs to the entry-level one, along with 40in and 58in versions. The TX-50DX700B is without the Studio Master HCX processor, enhanced speaker system, and THX and UHD Premium certification that litter the spec sheets of the higher ranges. But for £1000, it doesn’t leave you feeling hard done by – unless 3D is a must, as it’s a no-show here. Instead, you get a 4K panel that supports HDR, meaning it is Ultra HD Blu-ray-ready, and an all-encompassing Firefox OS smart experience (more on that later). Panasonic is also highlighting the range’s ‘Switch Design’: an adjustable stand design where the two feet can be fixed near either end of the screen or, to accommodate narrower stands, more centrally a couple of feet apart. Sony had a sim...

Australia’s SEA Electric is set to displace diesel in commercial vehicles worldwide

The Australia Institute’s National Energy Emissions Audit revealed the disheartening news that growth in diesel consumption, mainly in road transport, has negated gains made in carbon emissions reduction achieved in the NEM. But one Australian automotive-engineering firm has plans to transform the light-to-medium-duty diesel-slurping vehicle sector to run cleanly and quietly on electricity. The City of Yarra is an early adopter of the SEA Electric-Isuzu medium-duty 100% electric tipper truck for rubbish collection. On Friday, Melbourne-based automotive technology company SEA Electric received its first three-figure order — 100 Hino 195s fitted to run on electric power — from US commercial electric vehicle (CEV) service provider Zeem Solutions. The 100% electric medium-duty trucks will be assembled under license in the US by Fontaine Modifications which will upfit them with SEA-Drive 120a power systems. Designed in Australia, these motors deliver a range of up to 320 kilometres, 80 kW (110 horsepower) of continuous power, torque of 150 kg/m (1,500 Nm) and zero emissions. Mechanical engineer Tony Fairweather, founder and President of SEA Electric,  launched the company’s 100% elec...

PC-shutters-a-clear-replacement-for-plywood-in-hurricane-zones logo-pn-color logo-pn-color

Polycarbonate window shutters flew off store shelves as U.S. homeowners prepared for hurricanes Harvey and Irma and then braced for José and Maria. The Atlantic hurricane season doesn’t end until Nov. 30, and 2017 is on track to rival the most active years. As of Sept. 18, there were 13 named storms, seven hurricanes and four major (Category 3 or stronger) hurricanes. In Sarasota, Fla., the small staff of Hurricane Safe Products Inc., a manufacturer of storm and security shutters that does business as UltraTek Worldwide, has been busy filling orders and preparing for the launch of a new product created to help those same homeowners. The privately held business says it is the largest buyer of PC in the state, and it is getting into a new material. Co-owner Steve Motosko said corrugated PC shutters are his best-sellers, but the company’s patented flat PC shutters introduced 11/2 years ago are being used increasingly to secure upper-floor and arched windows in homes and businesses. The clear panels are unobtrusive and can be left in place over windows that are a hassle to cover in a hurry. UltraTek will be out with its next product — a patented motorized hybrid shutte...
